Peach Cobbler with Almond Topping Recipe

Serves: 8
- 9 medium size ripe (but still firm) peaches. About 3 lbs
- ½ cup plus 2 Tbsp of sugar
- 2 Tbsp lemon juice
- 4 Tbsp cornstarch
- 1 cup almond paste
- FILLING
- Immerse the peaches in enough boiling water to cover for 3 seconds
- Remove, let it cool briefly then peel with a knife
- Cut peaches in half, pit and slice
- Pour the peaches in a 2 quart baking dish
- Cover peaches with a mixture of 2 Tbsp sugar, lemon juice, 2 Tbsp cornstarch and mix gently to cover all the fruit
- TOPPING
- Crumble almond paste in a bowl
- Add ½ cup of sugar and 2 Tbsp cornstarch
- Blend everything well by using your fingers
- Squeeze the mixture together, then break it into chucks of about 1 inch
- Cover fruit evenly with the topping
- Bake in a 350 ยบ oven until golden brown and bubbling filling, about 45 or 50 minutes
