Peach Cobbler with Almond Topping Recipe

  • 9 medium size ripe (but still firm) peaches. About 3 lbs
  • ½ cup plus 2 Tbsp of sugar
  • 2 Tbsp lemon juice
  • 4 Tbsp cornstarch
  • 1 cup almond paste
  2. Immerse the peaches in enough boiling water to cover for 3 seconds
  3. Remove, let it cool briefly then peel with a knife
  4. Cut peaches in half, pit and slice
  5. Pour the peaches in a 2 quart baking dish
  6. Cover peaches with a mixture of 2 Tbsp sugar, lemon juice, 2 Tbsp cornstarch and mix gently to cover all the fruit
  8. Crumble almond paste in a bowl
  9. Add ½ cup of sugar and 2 Tbsp cornstarch
  10. Blend everything well by using your fingers
  11. Squeeze the mixture together, then break it into chucks of about 1 inch
  12. Cover fruit evenly with the topping
  13. Bake in a 350 ยบ oven until golden brown and bubbling filling, about 45 or 50 minutes
