Ingredients
  • 1 ham (about 5 pounds, can be spiral sliced to make it easier), cured or smoked, but fully cooked
  • 2 cans Coca-Cola
  • ½ cup barbecue sauce
  • 1 Tbs butter
  • 1 Tbs flour
  • 1 Tbs mustard (whole grain or yellow)
  • 1 tsp hot sauce (optional)
Instructions
  1. Preheat your oven to 375 degrees F (200 C);
  2. Score the surface of the ham with a sharp knife, making diamond patterns;
  3. Place the ham on a baking tray, brush it with the barbecue sauce and drizzle 1 can of coke over it;
  4. Cover the ham in aluminum foil and bake in the oven for 45 minutes;
  5. Remove foil and return to oven to bake uncovered for another 30 minutes, basting with the pan drippings often;
  6. Place ham on serving platter and set aside;
  7. In a sauce pan over low heat, prepare the gravy by making a paste with the butter and the flour, heat it until lightly golden, add the mustard, all the drippings from the baking tray and the other can of coke (plus the hot sauce if you desire);
  8. Simmer for about 10 minutes, whisking constantly to make it smooth, until thickened. Correct the salt if necessary;
  9. Transfer gravy to a gravy boat and serve alongside the ham;
  10. Accompany this dish with mashed potatoes!
