Ingredients
  • 2 eggs
  • 4 Tbsp melted butter
  • ¾ cup milk
  • 1⅓ cup all purpose flour
  • ⅓ cup sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 1 cup fresh blueberries (you may use up to 2 cups if you wish)
Instructions
  1. Preheat oven to 400 degrees;
  2. Grease muffin pan or place 12 paper cases in pan;
  3. Whisk the eggs well, then add the melted butter and milk. Combine everything well;
  4. In a bowl, sift together the flour, sugar, baking powder and salt. Make a depression in the middle and add the egg mixture. Stir to blend everything, but don't over mix or you'll get tough, dense muffins;
  5. Add the blueberries and fold gently;
  6. Distribute the batter evenly into the 12 paper cases;
  7. Bake for 20 minutes, or until the top rises, but still springs back when pressed
