Ingredients
  • 2 Tbsp butter
  • 1 whole chicken, cut in pieces, fat and skin discarded
  • 1 large onion, chopped
  • 1 large carrot, chopped
  • 3 tomatoes, chopped
  • 2 cloves garlic, minced
  • A pinch of nutmeg
  • Salt to taste
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh green onions
  • 2 quarts water
  • 1 cup of uncooked rice
Instructions
  1. In a large stock pot, over medium heat, melt the butter and fry the chicken;
  2. Add the onion, tomatoes, carrot, garlic, nutmeg and salt to taste. Saute for about five minutes, then add the water and parsley and green onions;
  3. Close the lid and lower the heat to a simmer;
  4. When the chicken pieces are tender, remove from stock;
  5. Debone the chicken, shred the chicken meat and return meat to the stock;
  6. Add the uncooked rice and simmer for about 20 to 25 minutes. Add more water if necessary.
