Ingredients
  • 3 lbs russet potatoes, unpeeled
  • 1 cup plain yogurt (low fat is fine)
  • 2 tsp of bouillon granules
  • 1 or 2 Tbsps butter
  • Salt and pepper to taste
  • Chopped parsley or green onions
Instructions
  1. Cut the unpeeled potatoes and cook in lightly salted boiling water until tender (about 10 minutes);
  2. Drain and return to pot;
  3. Add the yogurt, butter, and bouillon. Taste and correct seasoning with salt and pepper;
  4. Stir to mash the potatoes and garnish with the chopped herbs before serving.
