Swedish Meatball Recipe

Ingredients
  • 1 lb lean ground beef
  • 2 Tbs onions, minced and sauted in 1 Tbsp of butter
  • ½ cup bread crumbs
  • 2 Tbsp butter
  • 1 egg, beaten
  • 3 slices of bacon, chopped
  • 2 Tbsp all purpose flour
  • 1¾ cups beef stock
  • Nutmeg, salt and black ground pepper to taste
Instructions
  1. In a bowl, combine the meat, bread crumbs, minced onions, egg, nutmeg, salt and pepper;
  2. Without applying too much pressure, gently roll the meat mixture into 1½ inch balls;
  3. Let stand for an hour, covered with a dish cloth;
  4. In a large skillet, over medium heat, fry the bacon, and when you have enough pork fat in the skillet, brown the meatballs;
  5. In a separate sauce pan, melt the butter, add the flour and stir until flour is blended and lightly golden. Add the beef stock gradually, stirring constantly. Season with salt and pepper and bring to a boil;
  6. Bring heat down to a simmer, add the meatballs, cover and cook for about an 1 hour.
