Serves: 20-25 squares
Ingredients
  • 1 cup all purpose flour
  • ¼ cup sugar
  • 4 teaspoon baking powder
  • 1 tsp salt
  • 1 cup medium grind cornmeal
  • 2 eggs
  • 1 cup milk
  • ¼ cup soft shortening
Instructions
  1. Preheat oven to 425 degrees;
  2. In a mixer bowl, sift the flour, baking powder, sugar and salt;
  3. Add the cornmeal and stir;
  4. Add the eggs, shortening and milk and beat for about 1 minute (do NOT over beat) or until just smooth;
  5. Pour the mixed batter into a greased 9x9 inch pan;
  6. Bake for about 20 minutes or until a toothpick comes out clean when inserted in the middle of corn bread;
  7. Cut in squares and serve warm.
